$5 Meal of the Week: Veggie Rice Bowl
I don’t want to call myself cheap and lazy, but I definitely don’t like spending a lot of money on food, and I don’t like spending a lot of time in the kitchen. You feel me?
A lot of the meals that I make for myself contain staples such as beans, lentils, rice, couscous, or quinoa. I add some frozen veggies, tofu or tempeh, a little tamari, and voilà—I have a delicious, nutritious, and affordable dinner!
Veggie Rice Bowl
1/4 bag Brown Rice Medley from Trader Joes ($3 for a 16-oz. bag or 75¢ for 1/4 bag)
1/4 bag frozen veggies ($1.70 for a 16-oz. bag or 43¢ for 1/4 bag)
1/4 block tofu ($2 for a block or 50¢ for 1/4 block)
3 Tbsp. tamari ($3 for a 20-oz. bottle or 23¢ for 3 Tbsp.)
Total Cost: Approximately $1.91
- Prepare the rice by following the instructions on the bag.
- In a separate pan, warm up the frozen veggies and tofu.
- Pour the rice, veggies, and tofu into a bowl.
- Add tamari sauce, pick up a spoon, and dig in!
