OK, so I have to admit it: Up until a couple of years ago, I had never even heard of kale. When I did finally try it, though, I fell head over heels in ♥!
So, what is kale exactly? It’s a tasty leafy green vegetable loaded with vitamin A, vitamin C, potassium, fiber, iron, and calcium! Basically, it’s a nutrient-packed powerhouse!
This “super food” is also super-versatile in the kitchen—it can be used in tons of recipes, like smoothies, juices, salads, stir-fries, and soups.
Want to know my fave ways to eat kale? I’m a big fan of cutting it into small pieces and using it in salads instead of lettuce. I also ♥ adding it to veggie soup and tofu scramble. YUM!

^.^ I like this idea of introducing vegetables and such on peta2. It’s a good educational blog for those that are just begining vegetarianism/vegan.
