Generally speaking, there’s no single way to cook tofu. It can be used in stir-fries, breakfast scrambles, lasagna, and most every other kind of dish imaginable.
Of course, before you can fire up the stovetop, you’ve got to take the tofu out of its packaging. This often involves squeezing some water out, to ensure that it doesn’t become too soggy when cooked. Traditionally, you can just use a paper towel to press the water out, but if you’re eco-conscious, and are looking for a paper-free way to prepare your tofu, student activist/blogger Chadwick Moyer has you covered:

Hah! That’s pretty much what my mother does as well! (Master at cooking tofu ;D)
Except she just places the tofu block in a pan, dish, bowl/plate and lets it sit there for 20 minutes without the first two steps. Then proceeds to do everything else.

Hey Ryan, good to see you guys finally got this up.
Chad and I have been using this for many years, not only does it save on paper but it works very well.
I advise everyone to try it.
(also a side note..if you have a heavy bamboo cutting board, you dont need to stack cans on it)

Well, lookie there… That’s fancy! I always put mine in a square gladware thing, put another gladware thing on top (like I’m stacking them to store them, except there’s soggy tofu in between) and push down on the top one. A lot. I guess that can be a if-you-need-your-tofu-uber-speedy-and-you-can’t-wait-20-minutes-bc-Nana’s-dying-for-some-falafel method and your method can be a lazy tofu day method.
