Today is one of my favorite, although slightly underrated, holidays—National Pancake Day! It’s a whole day devoted to what many would argue is the greatest of all the breakfast foods. Whether you like ‘em light and fluffy, a little on the gooey side, filled with fruit, or topped with treats, pancakes are the perfect start to any day … or any brunch … or the perfect end to any day!
You can find a ton of totally delish vegan pancake recipes here, but I wanted to share one of my personal faves—Marta’s pumpkin chocolate chip pancakes. Mmmm

According to Marta, here’s all you’ll need to devour these delicious, pumpkin-y, breakfast treats:
Mix everything together, then spray a frying pan or griddle with cooking spray. Pour 1/4 cup of batter at a time (3 pancakes will likely fit in the pan at once), and cook until browned/cooked on the bottom. Flip, and cook until browned. Repeat until all the batter is gone. Serve topped with warmed maple syrup.
