January is National Oatmeal Month, National Soup Month and National Hot Tea Month. I was excited to hear about this because these are three of my favorite easy-to-prepare vegan meals.
Apparently January received this honor because more people purchase these foods during the month of January than any other time of the year. I totally believe it too. I know when it’s super cold outside I always want one of these three items. Not only do these foods help keep you warm, all three are super healthy and don’t support the dairy industry. Both oatmeal and soup are also high in fiber and rich in vitamins. Tea is also known to help fight colds. When I was in college, I always kept these foods around because all I had to do was microwave them for a minute or two, and I had a delicious, cheap meal!
If you’re always on the go between classes (meaning that you woke up too late to fix yourself breakfast) and want an easy way to have a meal on hand, why not try making your own instant oatmeal packages? Purchase any cannister of plain instant oatmeal, grab a bunch of your favorite dried fruits, a pinch of salt, and about a teaspoon of brown sugar, and a small plastic bag. There are plenty of other recipes for making your own instant oatmeal as well. Most food courts on campus have a hot water dispenser, so get some hot water and a bowl and fix yourself some oatmeal!
