Need a recipe for the perfect Halloween? How about one part pumpkin-carving party and one part vegan-treat potluck? Yep—it happened. At my apartment. Yesterday!
Check out pumpkins from peta2’s finest: Christina, Ryan, Cody, and me! And, yeah, those are chocolate-covered apples rolled in hazelnuts and butterscotch candies … no biggie. 😉
Wanna make ’em yourself?! Here’s how:
1/3 cup vegan chocolate chips
1 Tbsp. almond milk
4 Popsicle sticks
1 sheet parchment paper or aluminum foil
A few crushed butterscotch candies
1 cup chopped hazelnuts
- Combine the chocolate chips and almond milk in a small saucepan over low heat. Stir until melted.
- Push a Popsicle stick into each apple and dip the apples into the chocolate.
- Place a chocolate-covered apple on a dish covered with parchment paper and sprinkle with butterscotch candy and hazelnuts. Repeat for all the apples.
- Refrigerate for an hour (or overnight!).
Makes four apples
