Recipe of the Week: Bean and Cheese Roll-Ups

Looking for something light to munch on after a long day at school? Well, look no further! This month’s Recipe of the Week theme is after-school snacks, and that means we’ve got you and your tummy covered with tasty, quick snacks that’ll totes hold you over till dinner’s on the table.

First up: vegan bean and cheese roll-ups!

Vegan Bean-and-Cheese Roll-Ups

Vegan Bean-and-Cheese Roll-Ups

  • Prep time: 5 mins
  • Cook time: 10 mins
  • Servings: 1
  • Select your preferred print size and click 'Print Recipe':

Ingredients
  • 1/2 can refried beans
  • 1/2 cup shredded vegan cheese
  • 1 medium tortilla
  • 1/4 cup pico de gallo
  • 2 Tbsp. guacamole (optional)
Instructions
  1. Preheat the oven to 400ºF.
  2. Spread the refried beans and vegan cheese evenly on the tortilla and roll it up.
  3. Place on a cookie sheet and bake until slightly crispy and browned, about 10 minutes.
  4. Top with the pico de gallo and add the guacamole for dipping.
