Recipe of the Week: Asparagus and Sun-Dried Tomato Pasta!
My friend recoiled when I told him that my favorite vegetable was asparagus, which is pretty much what most everybody does when I say that. Sure, this tasty vegetable makes your pee smell odd, but asparagus has a number of benefits that I’m all for. My favorite benefit for eating asparagus is that it will help keep me looking young! Anyway, enough of that jazz—who wants to get this week’s recipe rolling? Asparagus and Sun-Dried Tomato Pasta, here we come!
Asparagus and Sun-Dried Tomato Pasta
8 oz. your favorite pasta
1 clove garlic, minced
1 tsp. olive oil
1/4 bunch asparagus, chopped
2-3 Tbsp. sun-dried tomatoes
- Prepare the pasta by following the instructions on the package.
- Sauté the garlic over medium heat in the olive oil for a couple of minutes, then add the asparagus and sun-dried tomatoes.
- Strain the pasta and add the veggies. Mix.
- Dig in!
