Recipe of the Week: Baked Potato Chips!

Ugh, snack food. I love thee, and I hate thee. Why the hate? Well, it’s too damn difficult to think about what I want to eat after a hard day of studying! Sometimes I come home and just want to eat something super simple, but I wind up eating a bunch of disgusting crap. How about this week we make something super freakin’ simple and also super cheap and delicious? Chips it is!

- Prep time: 10 mins
- Cook time: 10 mins
- Servings: 1 to 2

Ingredients
- 1 small potato, washed
- 3 dashes pepper
- 3 dashes salt
- 3 dashes hot sauce (optional)
Instructions
- Preheat the oven to 400°F.
- Use a mandoline to cut the potato into slices, or if you're skilled with a knife, carefully cut the potato to the desired thickness.
- Line a baking sheet with parchment paper. Spread the potato slices onto the baking sheet in a single layer and sprinkle with the pepper, salt, and hot sauce.
- Bake for 10 minutes, then flip over each potato slice. Bake for 8 more minutes, or until golden brown.
What I love about this is that you can be a complete idiot and still enjoy this. Hell, even your pals who still eat flesh can get down with this (and other vegan treats, duh!)! I highly recommend some sort of dip to go with these, but even eating these chips plain will satisfy your hunger. Enjoy!

Mine still come out soggy. Perhaps my slices are too thick because i used a regular knife. Perhaps I shouldn’t use red potatoes… Anyway, i’ll cut them in strips next time and call them ‘french fries’. Ha. Soggy or not, this was still a delicious recipe.

they’re supposed to be “chips” so i’d deffinetely recommend slicing the potato into thinner slices.
