Recipe of the Week: Shamrockin’ Shake!

It’s the time of year—leprechauns and pots o’ gold. What else could make March so delightful? A Shamrockin’ Shake, of course!

Think about it: cool, creamy vanilla (vegan!) ice cream swirled with peppermint—feels more like St. Christina’s Day than St. Patty’s Day to me.

This shake is unbelievably easy to make (like all of our recipes), and is super rewarding—in a way that a pot o’ gold isn’t. You know, because it tastes good, and gold would chip your teeth if you tried to eat it.

Here’s what you’ll need:

  • 1 cup vegan vanilla ice cream (try So Delicious!)
  • 1/2 cup soymilk
  • 1/4 tsp. peppermint extract
  • Dash of green food coloring (optional)

First, scoop the cup of ice cream into a mixing bowl and leave on the counter for about five minutes. Next, add the soymilk and peppermint extract. You can mix everything in a blender if you want, but I prefer to grab a fork and stir everything really fast—hey, it does the trick, ya know?

After everything is mixed well, add a few drops of green food coloring (a little goes a long way). Stir until the color is evenly distributed, pour into a glass, and you’re done!

Bonus: I heard if you make this drink on St. Patrick’s Day, you won’t get pinched (because it’s green!).

    I tried, but I put too much peppermint extract in! I accidently put the whole bottle in, it was way to strong. I’m going to try again, but be smart this time! :)

    i would start with a few drops of the peppermint extract and slowly add more to taste – otherwise its extremely strong!

      Im not sure but one that i know to me extra careful with is red food coloring. It’s made from crushed bettles. But its only a certain color.

    Or you could spill it all over yourself, then you would be wearing green! But that would be a waste of a perfectly delicious smoothie! ;)
