Recipe of the Week: Vegan Lunchables!

Let’s face it—nobody wants to cook in the morning. If you’re anything like me, you get up five minutes before you have to, brush your teeth, grab the first three things you see in the fridge, hopefully remember to put on pants, and walk out the door.

Well, rest assured my groggy and underdressed allies, this recipe is for us:

Vegan Lunchables

1 box of Ritz crackers (even the “garlic butter” flavored ones are vegan!)

1 package of vegan bologna, turkey, or ham

1 package of vegan cheddar cheese slices

1 package of vegan chocolate pudding (I like ZenSoy chocolate/vanilla swirl, but you could also make your own)

  • This recipe is so simple that calling it “cooking” would probably be a disservice to the chefs of the world.  Out of respect, we’ll call it “stacking.”
  • All you have to do is place the crackers on the meat, and use a knife to trace alongside the outside of the cracker (so that they’re the same shape). For the cheese, I just cut mine into little squares.
  • How you stack them is up to you! Cracker/vegan meat/cheese. Cracker/cheese/meat.  Cheese/cheese/cheese. The choice is yours.

    Is the tofurky turkey good raw or does it need to be cooked? And ong I love the zensoy pudding cups! It’s difficult ti limit myself, but I’ve gotta stay healthy!

    Tofurky is amazing if you want to buy pre-made meat, but if you have time I highly recomend making a seitan loaf and using that. I also havent found any cheese I like to eat cold, so maybe some home-made cashew cheese? Mmm

    It’s hard enough to find vegetarian food, vegan food doesn’t exist in my shops.

    I’d like to try this, but which lunchmeats don’t taste awful? I remember them always being a huge dissapointment, to the point where I haven’t bought them in years.

      Tofurky hickory smoked flavor are really really good. That’s the only faux sandwich meat I’ve tried and I loved it

    (: I’d like to try that. But in germany you’ll never get those things. -.- It’s really hard to get vegan food when you can’t spend so much money :’D And my mom thinks I’m insane.

      Same here, I’m living in Germany also, and almost nothing is vegan =/ I’ve seen vegetarian faux meats, but never vegan
