Recipe of the Week: Veggie Cutie Fruity Sushi
With the finalists for this year’s Cutest Vegetarian Alive competition running neck and (cute) neck, it seemed only appropriate to close out our month-long “fruit” recipe theme with a playful and charming new take on an old classic. A dish so lovable that even your meat-eating friends will look at it and say “OK, I’ll admit, that’s pretty darned cute.”
So this one’s for you, facemeltingly-adorable vegetarians of the interwebs—enjoy!
Here’s what you’ll need:
- 6 cups of Rice Krispies cereal
- 1 (10-ounce) tub of Ricemellow Crème (or an accidentally vegan marshmallow ice cream topping)
- 3 tablespoons vegan margarine
- 1 tsp vanilla extract
- 1 tsp agave nectar (optional)
- 1/2 box of Fruit by the Foot
- Swedish Fish
- Fresh fruit of your choice (I used kiwi, starfruit, and blackberries)
This is an easy one, folks! You’ll start by melting the vegan margarine in a pan, and then adding the marshmallow crème, vanilla extract, and agave nectar. Once it’s all melting and mixing together, gradually add the Rice Krispies, and stir frequently over low heat (to prevent burning or injury to Snap, Crackle, and Pop). Once it’s all gooey, just place the mixture into a greased pan, and let it cool.
Once cooled, you can cut the treats up into rectangles, and begin wrapping them in Fruit by the Foot, topping them with the fresh fruit, or simply go wild wrapping it all up with the fruit inside. Let your heart lead the way.
