I practically jumped up and down when I found out that our next theme for our Recipe of the Week blog was vitamin C packed potatoes! Not only are potatoes full of nutrients, but they are cheap, tasty, and you can make so many different kinds of recipes with them! I’ve been wanting to make stuffed potatoes for quite some time, and I’m so happy I got the chance to share these with you. We’ll be bringing you even more potato recipes this month, so go ahead and stock up on the taters!

Bake the potatoes in the oven (or microwave them if you’re feeling lazy—I bet there’s even a potato button on your microwave!).
When potatoes are cooked through, let them sit a couple minutes until they are cool enough to handle. Cut in half lengthwise and scoop out the middles. Mash the scooped out middles with BBQ sauce (about 2 tablespoons per half depending on the size of the taters). Add pineapple, green onions, veggies, and sea salt to taste. Fill the potato halves with the mixture—don’t be afraid to make them heaping!
I topped mine with green onions and a drizzle of BBQ sauce to make ‘em pretty.
