Recipe of the Week: Cajun Potatoes with Three Dipping Sauces

Anyone who eats with me knows that I am 100% addicted to anything spicy. From Indian food to Thai Food—I often have servers at restaurants look at me like I’m crazy when I ask for the spiciest thing they have. At home, when I want something quick, spicy, and delish, I dig out the generic (and cheap!) spice shakers. This week, in honor of our potato theme, I’ve whipped up some spicy Cajun home fries—and three dips to cool them off!

What you’ll need:

  • Potatoes—I used Red Potatoes, but any will do.
  • Olive Oil
  • Assorted Spices—I used Paprika, Cayenne, Cumin, Salt, Pepper, and Garlic Salt!
  • Optional Dips—I used Guacamole, Fire Roasted Red Pepper Hummus, and Ketchup!

Pre-heat your oven to 450 degrees. In a large bowl, throw some unpeeled, washed and chopped potatoes (you can cut them into any way you like) and toss them with olive oil. In a smaller bowl, mix all of your spices together, and then pour them over the potatoes. Mix it all together with a spoon until all of the potatoes are at least slightly coated with spices and oil. Grab a baking sheet (or long sheet of aluminum foil) and cover it evenly with olive oil. Lay the potatoes out on the sheet and then bake for 20 minutes, turn, and then bake for an additional 15-20 or until all of the potatoes are golden brown.

These are great for an easy appetizer, snack, side dish, or party food! Yum!

    You can also make a version of this using lemon juice, salt, and garlic. It takes next to no time to prepare and it’s a huge crowd-pleaser

    i made these for lunch today and absolutely fell in love.
    i used salt peper garlic salt onion salt paprika and it was delish!
    i highly recommend this with a side of tofu steak and a vegetable serving, carrots and brustel sprouts; my ultimate favorite.
