Our recipe of the week blogs have been so amazing that I just had to get in on the action. One of my favorite Mexican dishes has always been quesadillas. Now, I don’t always have vegan cheese, and sometimes, I want something just a bit healthier. That’s why I came up with the concoction below. It’s extremely easy, loaded with protein, and you’ll be able to get your quesadilla fix on (without contributing to the cruel dairy industry!) Feel free to add any ingredients like black olives, onions, or anything you can dig out of your fridge. All of the ingredients can be found at your local grocery store—and they’re pretty cheap, too!
Add beans to saucepan on medium heat. Mash with a fork until smooth and stir in half of the seasoning packet (or seasonings of your choice to taste). Cook until heated through. Remove from heat and stir in the cilantro. Heat tortilla on a skillet or for a few seconds in the microwave. Add some of the bean mixture to half of each tortilla and fold over quesadilla style. Serve with salsa or guac. Enjoy! These are easy to wrap in foil and bring for lunch.
