Recipe of the Week: Spring Rolls

There have already been some ridiculously tasty appetizers posted this month, and I’m here, yet again, to share one of my favorites with you—spring rolls. I’m pretty sure everybody loves a tasty spring roll, so why wait until you head out to your favorite Chinese food restaurant to get one? This is a very cheap appetizer to make—it cost me just over $5 for everything!

Here’s what you’ll need:

  • 6 lettuce leaves
  • ½ cup of shredded carrots
  • ½ cup of a thinly cut cucumber
  • 1 tablespoon of vegetable oil
  • Salt and pepper (to taste)
  • 1 block of firm or extra firm tofu
  • Vermicelli (thin pasta noodles, or your favorite noodles)—optional
  • 6 sheets of rice paper (this can be found at most major grocery stores in the ‘Asian’ food section)

To start things off, a little bit of prep work needs to happen—and don’t worry, it’s pretty quick. Start with draining the tofu—do your best to make sure all the water is drained. Next you’ll want to start preparing the vermicelli noodles by following the instructions on the package (if you choose to use vermicelli or another type of noodle). Next, you’ll want to wash and dry the vegetables, and then begin shredding the carrots and cucumber. Heat up a saucepan with 1 tablespoon of vegetable oil with medium heat and then add the shredded carrots and cucumber. Let them sauté for a few minutes and place them in a bowl to cool off.

Once the vegetables are ready, the tofu should be drained and ready to cut up. I cut my tofu into 2-inch rectangles that were about ½ wide, but feel free to cut the tofu how you like. Once you cut the tofu, fry it until it’s golden brown on the outside. Feel free to add salt and pepper while you’re frying the tofu (to a add a little flavor).

As the tofu cools down a bit, start preparing the rice paper. For this you will need a large bowl of hot water, a towel, and a plate. Place the towel on the plate and place a sheet of rice paper in the water for about 15 seconds. Since this water is hot, use a fork and gently place the rice paper sheet on the towel that’s on the plate (this prevents the rice paper from sticking to the plate). Place a lettuce leaf on the end closest to you; add the vegetables, tofu, and noodles. Rolling these are very similar to rolling a burrito. Roll the end closest to you towards the opposite end, fold the left and right side towards the middle, and continue to roll. Repeat this process until you’re out of ingredients, and you now have an appetizer! Grab your favorite dipping sauce and dig in! You know what? I have the perfect entrée that would go great with this …

I don't like LA but were here already what can I do unless I move out and find my own housing. I have always liked animals and it was til I was like about 14 when I learned about tests they do on animals and I began to explore animal cruelty because I was interested it in it. I have watched videos that just broke my heart so that's why today I'm doing all I can to not buy anything that has harmed an animal and I'm vegetarian .
