So, I’ve been vegan for about 3 1/2 years now. It’s never been a problem for me, and as much as I like to try to eat healthy, it really is easier for me to just go and buy the processed vegan mock-foods that are not only not all too healthy, but also more expensive than eating naturally.
The problem is my family is going through some financial trouble right now. Usually I buy what I can at Walmart and then all my specialty foods come from Wegman’s. Also, I am currently unemployed. I’ve been looking for a job, but the job search is now on hold because of a recent injury to my knee and an impending possible surgery.
I was wondering if anyone hand any really cheap recipes that don’t take a lot of prep time (being on my feet too much is hard because of my knee, fortunately my boyfriend and mother help with the cooking and stuff right now). Also, we have a vegetable garden, which helps defer costs a little, but I’d like to also buy things that will last a while, so I don’t have to try to eat everything I buy within a week or else it goes bad.
Really anything to help defer costs a little.
Also, if you have an extra $5 and wanna help out, I have a few Fiverr gigs up right now if you wanna check them out (http://fiverr.com/ikki_nikki)
Oh I’m always on the stir fry bandwagon! lol
I also have a rice cooker/steamer, so I toss in a few cups of brown rice and some stir fry veggies (Walmart style: $2 a bag) and I’ve got dinner for a week. I LOVE rice, and I can leave it unseasoned when I put it in the fridge so I can have a new flavor every time I eat it.
You can make vegan stir fry for literally 10 bucks, and have leftovers to freeze. Basically, get cheap bulk frozen vegetables, and tofu, and fry, then steam it. I have it once or twice a week and it takes 15-20 minutes. (for sauce, anything from orange juice to vinegar to soy sauce is good, corn starch will help it stick.) My family’s a bit overbudget, too, so I know what you’re going through. Good luck, I hope your troubles end ASAP!
I’ve done the banana ice cream thing a million times over! Sometimes because I don’t wanna spend $6 on a tub of ice cream, sometimes because I don’t have any, or sometimes because I like not gaining a ton of weight xD
My brother (who mocks my veganism all over the place) actually told me about the banana thing because he’s trying not to eat too much junk food, but he tosses a little bit of peanut butter into the mix!
I’ve been looking into tuna salad recipes, but generally I just stick with my tofu egg-less salad. It’s heavenly and CHEAP!
Today I’m stopping at Wegman’s for a few essentials. Mostly bulk rice and veggies, but I NEED my daiya mozzarella cheese no matter how broke I am! xD
Thanks for your understanding. Good luck to you as well =]
-Banana “ice cream” made of frozen bananas put into the food processor. It comes out like “soft serve,
but to harden it all you have to do is refreeze it :). I like putting either chocolate syrup or frozen strawberries on mine :).
-There is a recipe somewhere for chickpea tuna salad. If I had the link, I’d post it. It does require veganaise.
-Pancake recipe: http://www.vegetariantimes.com/recipe/the-white-pig-blueberry-pancakes/
^^ I’ve tried all of those, and they work wonderfully.
We’re having a little trouble financially, too, so I know it must be stressful for you. Hope things get easier soon.
