I have always loved animals, no matter what shape,size, color, species they are. I started as a vegetarian a few years ago, but i only knew that i didn't want to eat animal. i stoped for a while when i lost my job and ate what i could. no excuse i know. but soon later to realized my mission in life and purpose. i am here to be the voice of those who do not speak human. i changed my outlook to this because i found a boxer mix dog laying under my porch. she had gotten hit by a car and was severely starved. everyone around me was like leave it alone, you don't know where it came from, but i didn't care i had to save her. i rushed her to the emergency vet clinic where they did immediate surgery on her. despite those peoples commentary i saved a dogs life and from that point on i knew that if people treated a dog that way i wonder how people treat non domestic animals. I researched and came across peta2 where i now am an animal activist and vegan. I continue to help and save animals that i find and plan on never changing my ways for any one.

Being vegan while dealing with a whole bunch of stuff =/

So, I’ve been vegan for about 3 1/2 years now. It’s never been a problem for me, and as much as I like to try to eat healthy, it really is easier for me to just go and buy the processed vegan mock-foods that are not only not all too healthy, but also more expensive than eating naturally.
The problem is my family is going through some financial trouble right now. Usually I buy what I can at Walmart and then all my specialty foods come from Wegman’s. Also, I am currently unemployed. I’ve been looking for a job, but the job search is now on hold because of a recent injury to my knee and an impending possible surgery.
I was wondering if anyone hand any really cheap recipes that don’t take a lot of prep time (being on my feet too much is hard because of my knee, fortunately my boyfriend and mother help with the cooking and stuff right now). Also, we have a vegetable garden, which helps defer costs a little, but I’d like to also buy things that will last a while, so I don’t have to try to eat everything I buy within a week or else it goes bad.
Really anything to help defer costs a little.
