While you could, by leaving the meat & cheese out, have a vegan option anytime there, I like the idea of this. But I must say, the thought of chewing on firm tofu scramble grosses me out! ha ha. If it’s anything like the MorningStar veggie patties consistency though, I think I would eat it all up! 🙂
Had this for the first time over the weekend (several times) and it was awesome! It’s kind of spicy and has the texture of a firm tofu scramble. I had it in a burrito one day and tacos the rest of the time. 😀
