On my blog (www.pointblog.co.uk/insanestar) someone asked me “what do you eat?” when they found out I’m vegan. So I wrote a blog post with some examples of what I eat on a daily basis, to show them I have a varied diet and plenty of choices. I thought it might be helpful to some new vegans if I posted it here too 🙂
Homemade fruit smoothie (usually just using tinned fruit as I’m too lazy to prepare it all in the mornings!) with toast.
Porridge with added dried fruit.
‘Breakfast’ smoothie – made with soya milk, yogurt, fruit and fine oats.
Beans on toast with a soya yogurt for pudding.
Salad wraps with vegan mayo.
‘Roast dinner’ sandwiches – sage & onion faux meat slices and sage & onion stuffing with some mint sauce.
Pasta salad (vegan mayo is available in supermarkets or health food shops).
Sausage sandwich (Linda McCartney sausages) with ketchup.
Vegetable curry – there are so many varieties of this! You can either make it yourself or be lazy and buy one (just watch out for cream if you’re buying one).
Linda McCartney Country Pies, mash and veggies.
Spaghetti bolognaise using faux mince (most supermarkets do their own frozen brand but you can get dried stuff from places like Holland & Barrett too).
Veggie pizza (soya/non-dairy cheese is available from Tesco’s and sometimes Morrison’s)
Bangers and mash.
Fresh or dried fruit.
Nakd Bars (really yummy raw vegan snacks).
Oreos, bourbon biscuits, digestives etc.
Crisps, even several varieties of Pringles are vegan.
Oh, just bear in mind, I’m from the UK so some of this might not be relevant to those in other countries 😉
