Ever hear of a Fruitcake Toss? A superfun annual competition to see who can toss the traditional hard-as-a-brick fruitcakes the farthest and in the most creative way possible.
The most well known is the Great Fruitcake Toss at Manitou Springs, CO. A total scream.
But don’t toss these yumalicious last-minute fruitcakes that are speedy easy treats…
Raw Vegan Gluten-Free Fruitcake
From Go Dairy Free, via Healthy Beginnings magazaine
Ingredients
Dried Fruit:
1/4 cup agave nectar
1/4 cup water
1/4 cup dried apricots, chopped into small pieces
1/4 cup dried pineapples, chopped into small pieces
1/4 cup dried cherries
1/4 cup golden raisins
Cake:
4 cups walnuts
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon sea salt
1 cup dates
