I'm 17 and as of quite recently I've begun working my way towards becoming vegan, slowly trying to ease my parents into buying food that I could eat. This is due to much inspiration from my boyfriend, who made me realize that I shouldn't just go along with what I know is wrong.

Microwave Oven Day! Yep a holiday for that little zapper!
Gazpacho is a tomato-based soup that usually includes cukes, peppers, onions, garlic and various flavorings, and it’s always served cold.
Okay, it’s cold weather now, but one of the ingredients is often hot sauce so add a drop or two extra and you’ll get your heat on in no time!
Plus, there’s none of that standing over a stove or hovering over an oven!
Gazpacho for Macho Taste Buds
Ingredients
3 cups vegetable or tomato juice
1 medium onion, minced
2 medium tomatoes, diced
1 green bell pepper, minced
1 clove garlic, crushed
1 medium cucumber, diced
2 Tbsp. lemon juice
2 Tbsp. red wine vinegar
1 tsp. dried tarragon
1 tsp. minced fresh basil
Pinch of ground cumin
Dash of hot sauce
2 Tbsp. olive oil
Salt and pepper, to taste

Non-dairy whipping Cream (I used GoldTop)
Maraschino cherries
Cherry Syrup/Freshly squeezed Orange juice/Home-made Sugar Syrup
Rum (optional)
