    Ok, so I ate a bowl of ‘Breakup Pudding’ for breakfast! I’ve not broken up with anyone, I just made it last night and couldn’t resist having some this morning! I tried to make it breakfast-like by sprinkling oats on top LOL!

    Here’s the recipe for anyone else who’s a choccy fiend like me…

    Breakup Pudding from Peta2’s College Cookbook.

    1 pack firm silken tofu, crumbled
    10 tablespoons sugar
    8 tablespoons unsweetened cocoa powder
    1 1/2 teaspoons vanilla extract
    Pinch of salt
    (and I added chocolate shavings too)

    Blend all ingredients in a food processor or blender until creamy and thick (then stir in chocolate shavings). Chill.

    Makes four servings.
    (Or just one huge bowl…but I did just eat ONE serving this morning, I’m not THAT bad!!)

    Ok my turn. 1 Cup of coconut milk, 1/4 cup of agave, 1/4 cup of chia seeds and 3 tablespoons of cocoa powder. Mix and chill for about 2 hours and serve. So yummy. You can use fruit instead of chocolate too.

    I wonder if it makes good frozen pudding pops…or if you could squirt it into the middle of cupcakes or snackballs. I need to get more cocoa for lots of pudding experiments! Thanks for sharing the recipe! :)
