I tried using the Ener-G egg substitute and made Duncan Hines dark chocolate fudge cupcakes and they came out delicious but they’re not even very cupcake-like because they sunk so much in the middle and they don’t stay together very well.
You could try adding some baking powder as well as the egg replacer. Or skip the egg replacer and use one of the suggestions on this page: http://www.peta.org/living/food/egg-replacements/
(for cakes I would use the baking powder + oil combination)
