• Ener-G Egg Substitute Makes Vegan Cupcakes Sink

    I tried using the Ener-G egg substitute and made Duncan Hines dark chocolate fudge cupcakes and they came out delicious but they’re not even very cupcake-like because they sunk so much in the middle and they don’t stay together very well.

    Any suggestions?

    Dude! You gotta try making vegan mayo cupcakes. Yes, I know this sounds weird but they turn out sooo good! Check out the recipe here: http://www.hamptoncreek.com/just-mayo/recipes/chocolate

    You can totally use your favorite vegan mayo in place of the eggs and they come out so fluffy!

    You could try adding some baking powder as well as the egg replacer. Or skip the egg replacer and use one of the suggestions on this page:
    http://www.peta.org/living/food/egg-replacements/
    (for cakes I would use the baking powder + oil combination)
