Girl, I’ve spent most of my summers there and my last couple one’s as a vegan so I know where you’re coming from! Hope you’re enjoying the Fiestas there when they start in your town.

Here are some of my fave eats to have while I’m there:

-Vegan paella: Use a basic paella recipe but just add TONS of different veggies (zucchini, artichokes, green beans, etc.) and cook it in veggie broth for more flavor.

-Macarones al horno: Use a tomato sauce (we always use Solis) and add mushrooms, chick peas, sauteed onions and garlic and stick it in an over or a casserole dish.

-Patatas bravas: fry some potatoes with onions and garlic and top with some hot sauce/tomato sauce

-Tempura veggies: Mix flour, water, and salt together until it’s kind of liquidy and coat a variety of sliced veggies (zucchini, carrots, egg plant) and cook in a pan until crispy.
