I am going to offer mini-cupcake samplers as well at a much lower price. I just have to go on a cupcake making spree so I can get pictures of everything.
vegan red velvet? Whenever you make them, I will DEFINITELY buy them! (:
2-3/4 cups all purpose flour
2 cups granulated sugar
1/4 cup unsweetened cocoa powder
2 tsp. baking soda
1 tsp. salt
1-3/4 cups soy or almond milk
1 cup vegetable oil
3 Tablespoons vanilla extract
2 Tablespoons red wine vinegar
1/4 cup red coloring (You can use fresh strawberry juice, beet juice, food coloring, etc. I suggest strawberry juice, however, food coloring can be bitter, and many other things can work to color the cake)
@alexblue mmmmm butterscotch 😀 I’m actually lucky, they sell vegan butterscotch chips at a local bulk store here. I’m gonna add those to the list 😀
The cookie ones, I will try to make – I’ve tried to make them in the past and I just haven’t been able to get them to turn out the way I want them to. I’m a perfectionist when it comes to baking lol

I totally agree though, as far as the U.S. goes, the midwest is one of the worst places to be a vegan lol – at least anywhere that isn’t a major city. The closest whole foods or trader joes is about an hour away, and the next best thing is the health section of Kroger – which is understocked and overpriced. That’s why I’m really experimenting with using common ingredients to make my own vegan replacements. If I can get my hands on some agar agar, oh man… it’s going to get all molecular gastronomy up in here.
Thanks so much for wishing me good luck At this point though, I probably wont be able to move back to California for at least another year or so, and that’s really where I would prefer to open the shop. But until then, I have no problem working locally and through the internet 😀
S’mores, maybe.. or.. cheesecake flavored? We need more places to buy vegan food in these areas. I hate having to travel hours if I want to be lazy and have someone else prepare my food for me. Haha! Good luck in opening your store, hopefully you get to do so soon and I hope your Etsy does well – as well. Who doesn’t love cupcakes?

I totally understand, I’ve actually -never- bought a vegan cupcake from anywhere because of how expensive they are. I usually stand in the bakery at Whole Foods and just admire all the pretty vegan baked goods from afar lol.
I would really like to open my own store – and I plan on setting up at the weekly farmer’s market in town this spring/summer – but to open a vegan cupcake store in this area would be a direct shot into a pile of debt. The closest place a vegan anything would possibly succeed is about an hour away :/
So for now, the internet is my store lol
