I am going to offer mini-cupcake samplers as well at a much lower price. I just have to go on a cupcake making spree so I can get pictures of everything.
vegan red velvet? Whenever you make them, I will DEFINITELY buy them! (:
2-3/4 cups all purpose flour
2 cups granulated sugar
1/4 cup unsweetened cocoa powder
2 tsp. baking soda
1 tsp. salt
1-3/4 cups soy or almond milk
1 cup vegetable oil
3 Tablespoons vanilla extract
2 Tablespoons red wine vinegar
1/4 cup red coloring (You can use fresh strawberry juice, beet juice, food coloring, etc. I suggest strawberry juice, however, food coloring can be bitter, and many other things can work to color the cake)
@alexblue mmmmm butterscotch 😀 I’m actually lucky, they sell vegan butterscotch chips at a local bulk store here. I’m gonna add those to the list 😀
The cookie ones, I will try to make – I’ve tried to make them in the past and I just haven’t been able to get them to turn out the way I want them to. I’m a perfectionist when it comes to baking lol

I totally agree though, as far as the U.S. goes, the midwest is one of the worst places to be a vegan lol – at least anywhere that isn’t a major city. The closest whole foods or trader joes is about an hour away, and the next best thing is the health section of Kroger – which is understocked and overpriced. That’s why I’m really experimenting with using common ingredients to make my own vegan replacements. If I can get my hands on some agar agar, oh man… it’s going to get all molecular gastronomy up in here.
Thanks so much for wishing me good luck 🙂 At this point though, I probably wont be able to move back to California for at least another year or so, and that’s really where I would prefer to open the shop. But until then, I have no problem working locally and through the internet 😀
S’mores, maybe.. or.. cheesecake flavored? We need more places to buy vegan food in these areas. I hate having to travel hours if I want to be lazy and have someone else prepare my food for me. Haha! Good luck in opening your store, hopefully you get to do so soon and I hope your Etsy does well – as well. Who doesn’t love cupcakes? 🙂

I totally understand, I’ve actually -never- bought a vegan cupcake from anywhere because of how expensive they are. I usually stand in the bakery at Whole Foods and just admire all the pretty vegan baked goods from afar lol.
I would really like to open my own store – and I plan on setting up at the weekly farmer’s market in town this spring/summer – but to open a vegan cupcake store in this area would be a direct shot into a pile of debt. The closest place a vegan anything would possibly succeed is about an hour away :/
So for now, the internet is my store lol
