My semester started last week, and I have some pretty long days so I’m going to be needing quite a lot of filling lunches. I want to be healthier and save money because last semester, I spent half my pay on snacks and veggie burgers.
I know I can find tons of ideas online, but I was wondering if anyone had their own creative recipes that are easy to make, healthy and vegan they can share? 🙂
I like to make a “salad sandwich” by putting my normal salad into two pita halves. It’s quick and more convenient to eat in case I forget to bring a fork. :p
I’ve also filled pita halves with rice&mushrooms and they turned out pretty good!
