Oh, and this has to be mentioned….

    ‘Loco-Cocoa Snack Cake’
    From the Peta cookbook: http://www.amazon.co.uk/PETAs-Vegan-College-Cookbook-Sourcebooks/dp/1402218850

    Ingredients:
    1 1/2 cups all-purpose flour
    1 cup sugar
    1 teaspoon baking soda
    1/2 cup unsweetened cocoa powder
    1/2 teaspoon salt
    1 cup water
    1/2 cup vegetable oil
2 tablespoons white vinegar (I started making this cake last night before I realised I’d run out of white vinegar so I made it without! It didn’t rise but still tasted great!)
    2 teaspoons vanilla extract

Combine the flour, sugar, baking soda, cocoa powder, and salt in a bowl. Combine the remaining ingredients in a separate bowl then stir into the flour mixture (I don’t bother, I just shove it all in the same bowl!). Microwave on high for 6 to 7 minutes, rotating 1/4 turn twice until a fork comes out clean when inserted into the middle. Let cool for 10 minutes.

    THIS! Soooo good!!

‘Oowy Gooey 1 Minute Vegan Chocolate Mug Cake’
    http://soychick.com/foods/recipes/oowy-gooey-1-minute-vegan-chocolate-mug-cake/

    Ingredients:
    4 Tablespoons Flour
    4 Tablespoons Sugar
2 Tablespoons Cocoa powder (if you use hot cocoa mix, adjust your
    sugar)
1/2 Teaspoon of instant coffee (for added richness) – I don’t use
coffee and it turns out ok still.
a few drops of vanilla extract
    2 Tablepsoons Vegetable Oil
    2 Tablespoons Water
    Dash of salt
    Mug
    Microwave

First, mix dry ingredients and set aside.
Second, mix wet ingredients. Using fork, mix wet into dry. Make sure
to mix the bottom edges of your mug.
Set your microwave to high and cook for 1 minute (adjust 15 seconds more/less according to your microwave and your preference). 1 minute will make it very gooey. Don’t cook over 2 minutes (you’ll get a block of coal).
Wallah! You’re done. Fresh yummy gooey cake. Enjoy!
