Yumful National Indian Pudding Day!
Indian Pudding is an emblematic New England treat, traditionally made with cornmeal, milk, butter, molasses, and more. Let’s give it a vegan spin!
Vegan Indian Pudding
From Aubin at Saturday’s Child
Ingredients:
2 cups of “milk” such as vanilla soy milk
1/4 cup cornmeal
1/4 cup molasses
1 tsp ground ginger
1 tsp cinnamon
a pinch of nutmeg
a pinch of salt
