Vegan Classic Fettucine Alfredo
From The Savvy Vegetarian, adapted from The Everything Vegan Cookbook by Jolinda Hackett
1/2 cup raw cashews (or 1/3 cup cashew butter)
1 1/4 cups water
1 Tbsp miso
2 Tbsp lemon juice
2 Tbsp tahini
1/4 cup diced onion
1 tsp fresh minced garlic (or 1/2 tsp garlic powder)
1/2 tsp salt
1/4 cup nutritional yeast
2 Tbsp olive oil or safflower oil
6 – 8 scallions, sliced
1 12 oz package fettucine, cooked
