As we flip over to a new year, I’m gonna try a couple of changes…
• The traditional food holiday calendar has got to go! Not all of it, but I’m definitely veganizing it. Bye bye Peking Duck Day and Beef Brisket Day. Hello Chickpea Day and Edamame Day! 🙂
• Everyday I’ll feature a blogger’s vegan recipe matched to the day’s food holiday, then show you more deliciousness from that blog. Each new day will celebrate a yumful vegan food and a supercreative vegan!
Today’s holiday is New Year’s Day, so I’m nicknaming it Lucky Lentil Day. Lentils are supposed to bring good luck if you eat them today so here’s a wish for luck and a plateful of yum!
And the Blogger of the Day is Susan at FatFree Vegan Kitchen. I’m a superfan of Susan because she’s got an entire category called “Ridiculously Easy” (yay!), she invents recipes for every possible meal and from zillions of different world cuisines and she doesn’t like cilantro either. 😉
Red Lentil and Rice Patties with Coconut-Mint Sauce

Red Bhutanese rice (or brown rice)
red pepper flakes
sesame oil (not needed if baking instead of frying)
ginger paste or minced ginger
agave nectar (or other sweetener)
Skip the sauce and just use sriracha or ketchup if that’s what you’ve got. 🙂
