What’s your favourite home-made, simple ingredient meal? I’m talking no store bought veggie burgers, no pre-made vegan cheeses, no tofutti, no brand name “chikn” strips. Whatever you can whip up at home using fruits, vegetables, and other very common ingredients?
I love using chickpeas to make “chicken” based recipes. Lentils and red kidney beans are great for vegan meatloaf! Homemade almond milk can serve as a great base for awesome alfredo sauces, as well as ice cream (always plenty of bananas!)
One of my favorite meals, as well as easiest to make, is just a sweet potato with green beans. I like to stick the potato (sometimes I’ll use a regular spud) in the oven when I come home from a day of skateboarding. I have time to get cleaned up while the potato bakes. After the food is ready I put them together in a bowl and enjoy. It’s a simple, extremely cheap, filling, and healthy meal for active people.
Honestly, my favorite thing right now is banana, pineapple, and honeydew smoothie with coconut water. *salivates* Ohhhh man, so good.
I’m also really digging dehydrated “pizza” kale chips, right now. Kale leaves, covered in a puree of fresh tomato, basil, garlic, and nutritional yeast – dehydrated until crispy… nom nom nom nom nom.
Damn. Now I’m going to have to make some. -.-
And I can always go for some homemade “tuna” salad. Any excuse to use seaweed and/or chickpeas, I’m on it. haha
When I have the time and ingredients, everyone will beg me to make seitan. Every time I’ve made it, it gets better and better. This last batch we’ve just finished tastes better than the best veggie burger you’ve ever had.
If I’m making a simple meal just for myself, I’ll put some beans and brown rice together or make some nice, filling oatmeal with fruit. So easy to be vegan.
