If in UK they do burger mix, sausage mix etc for vegans. If you want to do the cheating making your own way.

I’ve made veggie burger using soaked sia seed, flour, veggies, and them a mixture to sauces to taste till I had a nice consistency and fried them

you could also try blending cooked rice and veggies to make a pattie bc I have had veggie patties with rice

Also if you buy wheat glueten (should be able to buy at an whole food store) you can make a lot of mock meat recipes that are unline (usually intitled under setan).

As far as cheese goes, anything that calls for nutritional yeast I cast aside bc I think it takes awful

Like @Styna said, veggie burgers are really easy to make. Vegan with a Vengeance has a good recipe, and there’s even a whole cookbook that’s nothing but vegan veggie burgers. Seitan is another vegetarian meat, it’s easy to make, tastes awesome and it’s crazy high in protein, and you can get everything to make it at walmart!

Homemade ‘cheese’ can go either of two ways, you’ll love it or hate it. Most ‘cheese’ things you make at home are made with nutritional yeast. Nooch tastes good *in* stuff, but not as stuff =/ Like, cheese sauces made with nooch taste very fishy to a lot of people.

As for the cheese, I haven’t found a good way to make very hard cheeses or cheese slices without getting fancy and expensive.
I did make a big blog of spreadable almond cheese by blending a 1 cup of almonds with water, a little sea salt, and 1/2 a cup of nutritional yeast. Blend until everything is smooth, then strain through a cheese cloth. Squeeze as much of the extra liquid out as possible, then let it drain over night while still in the cheese cloth. In the morning, you’ll have a tasty spreadable almond cheese :)
I would imagine, if you had something like a tofu press, it would turn it into a harder block cheese?

Veggie burgers are some of the funnest things to experiment with :D
The most common problem I encountered was getting them to keep from falling apart.
The ingredients are totally up to you, I usually use beans as a base and add in bits of whatever I have in the fridge – carrots, broccoli, zucchini, etc. I blend everything up in the food processor (but you could also just mince everything and smush it together) then I found, to get everything to stay together, mixing in some Ener-G egg replacer and corn meal works really well. As a general reference, I would do one Ener-G egg replacer and 1/4 cup corn meal per patty. Then the rest is up to you (but beans always make a fantastic base. And spices, don’t forget spices!)
