    Supercool StreetTeamer Little Lotte suggested a vegan microwave cake day and I’m all for that sort of easy baked-up brilliance so here ya go! 😉

    Katie’s the go-to girl if you need a quick hit of a sweet treat! Her goal is to create healthier versions of traditional desserts, with boatloads of oatmeals and pancakes and even tater tots too! She also gives you nutritional info for her recipes if you’re into that sort of thing. I am so not a calorie counter and I side with Katie when she says just balance your sweet bites with healthy foods and a treat-yourself-right attitude. :)
    Brave-hearted Katie has just picked up and moved from her quiet (warm) life in Texas to crazybusy (and much chillier) Wash DC…go wish her luck in her new chocolate-covered digs!

    1 Minute Coffee Cake in a Mug
    spelt or white flour
    baking powder
    stevia or sugar
    oil or vegan margarine or applesauce
    vanilla extract
    sucanat or brown sugar
    oil or vegan margarine or applesauce
    pecan or walnut halves

    This is the recipe I use when I need a very quick fix:

    <b>*Ooey-gooey cake in a mug*</b>

    4 tablespoons of flour
    4 tablespoons of sugar
    2 tablespoons of cocoa powder
    A few drops of vanilla essence
    2 tablespoons of vegetable oil
    2 tablespoons of water
    A dash of salt

    <b>You need:</b>
    A tablespoon
    A mug
    A microwave

    Serves one, takes less than five minutes to make, suitable for vegans :-)

    <b>What to do:</b>
    Mix all the ingredients together in a mug.
    Make sure to mix right to the bottom edges of the mug.
    Cook, on a high setting, in a microwave for one minute.
    You can adjust this by 15 seconds more or less but remember: one minute is fairly gooey but more than two minutes will give you a block of coal!
    Eat, straight from the mug, mmmmm!
    Wash mug and spoon.
    Make another…
