You’re right, 3/14 is Eat Pie for Pi Day, and 1/23 is the American Pie Council’s National Pie Day, so that’s at least 2 “official” pie days. But seriously, any day I get a pie craving, it’s “officially” Pie Day in my book…especially if it’s for superyumful Blueberry Hand Pies!

Isn’t 3/14 Pie Day? I mean, I know it’s Pi Day…but wouldn’t that make more sense than 1/23? Not that I’m complaining since I love any excuse for sweets!

Karin’s Incredible Chocolate Pie
Ingredients
Chocolate Cookie Crust:
25 vegan chocolate sandwich cookies
1/3 cup margarine, melted
Filling:
1 1/4 pounds soft tofu
1 1/2 cups semisweet chocolate chips, melted
Sliced kiwi, strawberries, or raspberries
