Lasagna is fun because it’s like a sandwich…once you get the basics down you can add whatever you want to it.
Scramble some tofu and make that a layer for a breakfast lasagna.
Add hummus, pesto or herbed vegan cream cheese for a hearty heavy lasagna.
Use a curry sauce or a ginger sauce with bok choy, edamame and Asian mushrooms for a Thai-style lasagna.
I bet there’s even a peanut butter, banana and “bacon” vegan Elvis lasagna recipe somewhere out there. 😉
