And since it’s Cinco de Mayo let’s go Mexican!

    Mexican Chocolate Tofu Pudding
    From Mark Bittman
    Ingredients:
    sugar
    silken tofu
    bittersweet or semisweet chocolate
    vanilla extract
    ground cinnamon
    chili powder
    chocolate shavings (optional)

Details and directions at Mexican Chocolate Tofu Pudding
According to the Rules of the Interwebs, you shouldn’t post someone else’s entire recipe, only part of it with a link to the rest, unless you’ve changed the recipe up bigtime.

Mark says “The texture of the pudding, which must be made with silken tofu, is almost unbelievably good. The silken tofu packed in aseptic boxes yields a slightly better texture than that packed in tubs.” and suggests that you “use the highest quality chocolate — semisweet or bittersweet, please — you can lay your hands on.”
Morinaga SilkenTofu (also known as Mori-Nu SilkenTofu) is packed in aseptic boxes and is the easiest to find. It’s “shelf-stable” so it’s not in the refrigerated section.

    Other custards…
Mexican Chocolate Tofu Pudding (No-Bake) made with tofu, chocolate and maple syrup from Kris at untied
Vegan Chocolate Custard (No-Bake) using soy milk, cocoa and corn flour from Madison at Veggieful
Creamy Vegan Chocolate Custard (No Bake) with coconut milk, chocolate, cocoa and agar from Mary at Sweet Roots
Mint Chocolate Custard Pots (No-Bake) using vegan milk, chocolate, cocoa and cornstarch from Miriam at Mouthwatering Vegan (You could sub in any flavor extract instead of mint.)
Baked Chocolate Custard from Melanie at VegFamily
Vegan Chocolate Custard (Baked and No-Bake Methods) made with coconut milk, tapioca flour, potato starch and chocolate from Ches at Peaceful Nosh

This is my favorite thing to eat so far this weekend! What are you feasting on?
