Adzuki beans (aka Aduki or Azuki) are supereasy to make and are a fun changeup from regular old black beans or kidney beans. AK’s take on bean burgers uses these little red gems and they’re ohsogood! There are zillions of yumful beans out there to try so start with A for Adzuki Burgers! 🙂

adzuki beans (cook them yourself or just use canned) tahini
water kelp granules (or you can try Spike)

I love my azuki beans in dorayaki! (sweet pancakes sandwiching azuki paste)
Dorayakis aren’t usually vegan (they have eggs in them) so I made vegan ones, and man they were hard to make! So note to anyone interested in making them: use premade azuki paste because starting from dried beans to make it is a mega-hassle! (unless you’re okay with that)
