    You can smash practically any vegan thing between 2 slices of bread and I’ll be happy, but if it’s crunchy and melty and yumfully flavorful, and the bread is mighty enough to pull it all together, then I’m in freakin’ sandwich wonderland. 🙂

    Smashed Chickpea and Avocado Salad Sandwich

    Ingredients:
    chickpeas
    avocado
    cilantro
    green onions
    lime juice
    salt and pepper
    bread
    sandwich toppings (ex: lettuce and tomato)

    Salad cream is a bit like mayonnaise (and sometimes I have to settle for vegan mayo when I can’t get vegan salad cream).

    @LittleLotte lol…that’s definitely the strangest sandwich I’ve ever heard of. Closest thing I’ve seen is cream cheese and mint jelly on a bagel. I had to google salad cream cuz I’ve never seen it here (though I did find a vegan recipe)…I promise if I ever get to the UK I’ll give your SC&MS sandwich a try! 🙂

    My fave filling… salad cream (the vegan kind of course) and mint sauce! Don’t knock it til you’ve tried it! I’ve been obsessed with this filling since I was little and have no idea how I discovered it!
