Chilly days are inching in and that means sweaters, scarves and big bowls of soup! Chicken noodle soup is probably the all time most popular soup but even as a not-yet-vegan kid, I hated it. Those mysteriously spongy chewy bits of chicken creeped me out and I usually just slurped up everything else and left them in the bowl.
I do love slurping soupy noodles though so I’m diggin’ out the Big Spoon.
Mexican Noodle Soup
cut fideo or angel hair pasta, broken into 1-inch pieces
chili flakes, chopped serrano chilies, or diced jalapeños, to taste (optional)
cilantro, soy sour cream, and sliced avocado, for garnish (optional)
