I had this for breakfast. Amazing.
1 cup of cooked quinoa
1/4 cup vegan granola (I used pecan)
1/4 cup coconut shreds
1/4 cup vanilla soymilk
teaspon of earth balance (coconut if you have it, regular is fine too!)
cinnamon and sugar to taste
Mix in earth balance first with warm quinoa then combine ingredients. Super yummy and protein packed. You can also add any fruit if you have any like apples or straw berries, ect. I like this way better than oatmeal!
