Veggies or pita wedges (heck, why not both?!) paired with hummus is probably my favorite. Also, if my family made vegan pizza the night before (made with mozarella-flavored soy cheese and topped with spinach, olives and mushrooms) I’ll wrap a few slices in Saran wrap and pack those in my lunch.
Finally, my favorite on-the-go food is NuGo Dark Chocolate protein bars. They are DELICIOUS, filling and good for you. If I’m in a super big hurry, I’ll grab a NuGo bar and a piece of fruir and I’m good to go!
Another couple quick ideas are: granola bar, soy yogurt, portable fruit (such as an apple or banana) and leftovers from eating out.
