I know exactly how you feel! I go to a small, private high school and I’m one of the only vegetarians there (don’t say you’re the only one because you might be surprised. Last year I found out that one of the seniors was actually a vegan. Who knew!). Another school in the area closed recently and we got most of their students, which in turn means that we got a lot more money. The school then hired a chef and a nutritionist to make lunches have more of a variety and to be more nutritious. I’ve been working with them to get more vegetarian food and now our chef makes everything have a vegetarian/vegan substitute. I know that this is really ambitious, but I definitely recommend talking to the kitchen staff. At both the schools I’ve been to in my life, the cooks have always been very nice and willing to listen to what the students want. Doing a quick Google search, it would seem that a bulk supply of about 48 patties would only be less than $50, which is comparable to hamburgers. If they don’t listen for some reason, talk to the administrators. Make a good case and I’m sure you’ll get it.
