Bean and rice burritos with salsa and tomatoes. I like using whole pinto beans instead of vegetarian refried beans; it tastes better.

My standby is tofurkey, too! But I LOVE hummus and crackers of some sort and some fruit if I just need a light lunch!

Salad wraps are my favorite.

I like to make Tofurky and tomato sandwiches to go. Really quick and easy for lunch. I add a little salt and pepper to the tomato before putting it on my sandwich.
