Amy’s canned lentil soup or Gardein sliders (find them at Target!) and a fresh salad with cherry tomatoes and balsamic vinaigrette

Dinner

Vegan Sloppy Joes

1 bag vegan beef crumbles (Boca, Gardein, and Beyond Meat brands work best!)

1 can Manwich sauce

3-4 Vegan hamburger buns or rolls

Pickle slices, to taste

Mustard, to taste

  • In a large skillet, cook the vegan beef crumbles according to the package instructions.
  • Mix in the Manwich sauce and cook until thoroughly heated.
  • Fill the buns with the “beef” mixture, pickle slices, mustard, and any other fixin’s you like.
  • Nom!

 Makes 3-4 servings
