Cereal (try Kellogg’s Special K Red Berries!) with soy or almond milk or Sweet Earth’s Big Sur burrito (find it at Target!) and sliced fruit
Eggless Egg Salad Sandwich
Bread of your choice, toasted (because toasted bread is our fave!)
1 pkg. extra-firm tofu, drained
1/2 cup vegan mayo (we ♥ Vegenaise)
1 1/2 Tbsp. Dijon mustard
1/4 tsp. turmeric (for the yellowy color)
2–3 green onion stalks, chopped
1/4 cup relish
Salt and pepper, to taste
- Drain the tofu by pouring all water out of the container. Place the block of tofu on paper towels, and cover the block with the paper towels as well. Press down for a few minutes, or place a heavy book on top of the block. Mash the tofu with a fork once it’s drained.
• Combine all other ingredients with the tofu, excluding the bread.
• Spread the mixture onto your slices of bread, and enjoy!
Makes 3 servings
Make mashed potatoes with unsweetened, unflavored soy milk and vegan margarine (try Smart Balance Light or Earth Balance brand) and mix in your favorite taco seasoning. Scoop into hard taco shells and top with lettuce, tomato, and avocado for yummy potato tacos.
Tip: Tofu makes the perfect replacement for eggs. You can use it in scrambles (respond to our text for our fave tofu scramble recipe) and sandwiches—and even to make vegan omelets.
