BBQ Pineapple Stuffed Baked Potatoes

Ingredients
  • 2 potatoes
  • some BBQ sauce, to taste
  • a few pineapple chunks
  • some green onions
  • an assortment of any other veggies you have (I used sautéed bell peppers)
  • some sea salt, to taste
Instructions
  1. Bake the potatoes in the oven (or microwave them if you're feeling lazy—I bet there's even a potato button on your microwave!).
  2. When potatoes are cooked through, let them sit a couple minutes until they are cool enough to handle.
  3. Cut in half lengthwise and scoop out the middles.
  4. Mash the scooped out middles with BBQ sauce (about 2 tablespoons per half depending on the size of the taters).
  5. Add pineapple, green onions, veggies, and sea salt to taste.
  6. Fill the potato halves with the mixture—don't be afraid to make them heaping! I topped mine with green onions and a drizzle of BBQ sauce to make 'em pretty.
