Cajun Potatoes with Three Dipping Sauces

Ingredients
  • some potatoes—I used Red Potatoes, but any will do
  • some olive oil
  • a few assorted Spices—I used Paprika, Cayenne, Cumin, Salt, Pepper, and Garlic Salt
  • some optional dips—I used guacamole, fire roasted red pepper hummus, and ketchup
Instructions
  1. Pre-heat your oven to 450 degrees.
  2. In a large bowl, throw some unpeeled, washed and chopped potatoes (you can cut them into any way you like) and toss them with olive oil.
  3. In a smaller bowl, mix all of your spices together, and then pour them over the potatoes.
  4. Mix it all together with a spoon until all of the potatoes are at least slightly coated with spices and oil. Grab a baking sheet (or long sheet of aluminum foil) and cover it evenly with olive oil.
  5. Lay the potatoes out on the sheet and then bake for 20 minutes, turn, and then bake for an additional 15-20 or until all of the potatoes are golden brown.
  6. Remove from the oven, and devour with dips like hummus, peanut sauce, hot sauce, vegan cheese, pesto, guacamole, ketchup, mustard--whatever you can think of!
