Ingredients
  • 1 15 ounce can black beans, rinsed and drained
  • some veggie broth or water, to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 cup corn, canned or frozen and thawed
  • 2 pieces vegan bread, toasted and torn into tiny pieces
  • 3 Tbsp. vegan shredded cheese (optional)
  • 1/4 tsp. cumin
  • some chili powder, to taste
  • some salt and pepper, to taste
  • 1/4 cup flour
  • some oil, as needed
  • 4 burger buns
  • some toppings, to taste
Instructions
  1. Spray a frying pan with cooking spray, add onion and garlic, and cook over medium heat for about 2 minutes, stirring regularly.
  2. Add in your bell pepper, and cook until onion is translucent (continue to stir). Remove from stove.
  3. Pour your beans into a blender and add just enough veggie broth or water to blend into a smooth consistency (it should still be thick).
  4. Combine onion and bean mixtures in a bowl, along with bread pieces, corn, cumin, chili powder, salt, and pepper.
  5.  Use your hands to make a small patty with an eighth of the mixture, then put a little of the vegan cheese on top of the patty, in the center.
  6. Make another patty with more of the mixture, and press the patties together, so the sides combine into one larger patty.
  7. Pour the flour onto a plate, then dredge the patty in the flour mixture.
  8. Pour a teaspoon of olive oil in a frying pan, then add the patty to the pan, cooking on medium heat, flipping over when brown, for a total of 8-10 minutes.
  9. Repeat with the rest of the mixture.
  10. Top with whatever toppings you ♥, then devour!
