'Cheezy' Cauliflower Mash

  • 1 head of cauliflower, washed and cut into medium-size pieces
  • 2 Tbsp. unsweetened almond milk or unsweetened soy milk
  • 1 Tbsp. vegan margarine
  • 1 tsp. nutritional yeast (optional)
  • 2-3 oz. Daiya Vegan Cheddar cheese
  1. Place the cauliflower in a microwave-safe bowl with the nondairy milk and vegan margarine.
  2. Heat in the microwave, uncovered, for 5 minutes on high.
  3. Remove and stir well, then heat in the microwave for another 4 minutes on high.
  4. Remove and place the mixture in a high-speed blender or food processor. Add the vegan cheddar cheese and nutritional yeast and purée until smooth.
  5. Season with salt and pepper.
