Chicken-Less Salad Wrap

Ingredients
  • 1 lb. firm tofu (or use your favorite mock chicken)
  • 1 celery stalk
  • 1/2 cup chopped onion
  • 1 Tbsp. pepper
  • 1 Tbsp. seasoning salt
  • 1/2 cup Vegenaise
  • 1/3 cup walnuts
  • 1 pkg. tortillas
Instructions
  1. Heat up your oven to 350 degrees.
  2. Drain the tofu, and cut into one-inch cubes.
  3. Spray down your baking pan with a cooking spray so the tofu won't stick to your pan. Place the tofu in the oven for about 20 minutes, or until it starts to brown.
  4. Let the tofu cool down for about 10 minutes, and then mix it with the the Vegenaise, pepper, seasoning salt, onion, celery, and walnuts.
  5. Lay the tortillas flat, scoop some of the "chicken" salad mix into them, and add your favorite toppings—like hot sauce, lettuce, and tomatoes. Voila, you have a tasty wrap in your hands!
